What a wonderful time of year the Summer holidays are for a teacher! Gone are the early mornings, dashing out the door at 7am and returning to do planning and marking of an evening. I cherish the holidays because I can do more of the things I enjoy- baking, being one.
Today I followed this recipe for blueberry and banana muffins. I used a tall muffin tin from Ikea and they turned out really well. They're spongy and fruity and delicious- I recommend this recipe for anyone who likes the lower calorie Starbucks muffins, which are my favourite. They contain very little saturated fat, which is a bonus!
These would make a good start to the day or a mid-morning snack.
